BBQ Baked Salmon with Mango and Avocado Salsa

Ingredients

2 lbs fresh Salmon I used 4 filets

2 tbsp brown sugar light

2 tsp smoked paprika

2 tsp onion powder

1 tsp garlic powder

1/2 tsp chili powder

1 tsp salt flakes

2 tbsp olive oil

Mango Avocado Salsa:

2 cup mango cubed

2 whole avocado cubed

1/4 cup cilantro finely chopped

1/4 cup red onion diced

1 whole jalapeno seeds removed, finely chopped

2 tsp honey drizzle

1 whole lime for juice and zest

Serve with:

1 cup rice brown

Instructions

Preheat the oven to 475. While oven is preheating, make the salsa.

In a medium bowl, place all ingredients for salsa together and toss gently to combine. Season with salt as preferred.

Line a baking sheet with foil. Combine spices together with olive oil in a small bowl.

Place the salmon on the foil lined baking sheet. If you choose to have one full piece of salmon that you will divide after cooking, place on the center of the sheet. If you use filets as I did, separate them on the sheet.

Rub the spice and oil mix onto the top of the salmon.

Depending on the thickness and desired doneness, bake the salmon for 5-12 minutes.

Remove the salmon from the baking sheet quickly as it will continue to cook if you leave it too long.

Place rice in the bottom of the bowl, a portion of the salmon, and top with the salsa.

Serve and eat! I added a bit of lime juice over the bowl before eating and it was delicious.

Notes

I fully cooked our salmon in just 6 minutes, but Greg would have preferred it a little less done. If the salmon is more thick, check the translucency of the meat and if it flakes. I did not line my baking sheet with foil, as seen in the picture, and I spent the evening scraping and cleaning salmon skin off of it.... please remember to line your sheet! - You're welcome for figuring that out for you ;) I used a jar of mangoes from Costco as the fresh mangoes I had in grocery delivery were not ripe enough. The mangoes were delicious. If you purchase whole mangoes, 1 mango is about 1 cup measured, so you will need two.
