Easy Oatmeal Bake
Have you seen the viral TikTok oatmeal bake? I’m not on TikTok, but a few Instagram accounts I follow were making it so I thought I would give it a try. Not only is it SUPER easy, but it’s warm and tasty. Mady, who’s never been an oatmeal fan, loved it and wants me to make it for her next sleepover. If you give it a try, let me know. I also kept it in the fridge and warmed servings in the microwave for a few days.
I made mine gluten-free and dairy-free as well. Feel free to sub your favorite Greek yogurt, milk, and oats as well as any fruit topping you would enjoy.
•2 bananas
•2 cups One Degree Organics GF rolled oats
•2 tbsp chia seeds
•2 cups unsweetened vanilla almond milk from Califia
•1/2 cup @kitehillfoods plain almond milk yogurt
•1/2 cup peanut butter (I over measured a bit on this one)
•1 cup blueberries
•1 cup sliced strawberries
•handful Hu Kitchen dark chocolate gems
•warmed raw honey for drizzle and a dollop of yogurt for topping.
Preheat oven to 350°. Spray 8x11 pan with nonstick spray (I use coconut oil spray)
Mash bananas in dish. Add oats, chia seeds,milk, then stir. Add yogurt and PB. Stir again. Top with fruit and chocolate gems.
Bake 25 minutes. Serve warm with honey and a bit of almond milk yogurt on the side.
